How many cables fit through the opening?

Depends on the thickness of each cable. But, in general, at least 4-6 small cables, or electric cords. (Remember, each electric cord = 2 Cat5 cables, and even more Apple or android charger cables. It's a 2-piece unit... a 3" round frame, and a cover that fits inside. If you remove or not use the cover, it's a huge 3" hole... unlimited # of cables/cords.

What size hole is required for this cover?

I used a 3” hole saw for mine

will the top of the grommet come off? leaving just the ring?

Yes it will. The overall width without the insert is 3 9/19" with a 2 3/4" opening. The thickness above the desk is 1/16". The opening in the cap is 7/8" x 1 1/8" clear when inserted in the base. When inserted the cap just shy of the base in width.

On already installed wires can it be used without removing and reinstalling wires

No. There is not an opening on the frame portion of the product.
