No refrigeration needed as long as you do not open the block. This is typically in the same grocery aisle as the crackers. After you open the block it might need refrigeration but we’ve never had any leftover after we melt it with Rotele.

why do I need to sign up for amazon fresh for this - Velveeta has a shelf life of a year?

I’m not quite sure what you mean about the cheese it’s good but I don’t know if I would keep it for a year. Amazon Fresh is very convenient for me right now. I love the multiple times and dates I can pick. I can customize delivery around my schedule.
