Although there are other low-carb pastas available, this one is higher carbs than some of them, but tastes very close to regular pasta youโre used to eating. Itโs a bit chewier and al dente and you have to cook it over 15 minutes, but it is close to the taste (and near texture) of the high carb regular pasta. Not sure if you could cook it longer to be more tender. Iโve only cooked once to go on a meat sauce. 16 net carbs is much better than 40 of regular pasta. So I recommend it even though, like the other low carb pastas, itโs very expensive. But if youโre on a keto/low-carb diet, and you donโt eat it often, I think itโs worth the extra cost. Update: I have cooked this pasta now three times. I find if you cook it longer than 15 minutes, until the texture you like, it is soft and similar to regular wheat pasta. As a matter fact, I canโt tell any difference. I donโt think itโs that expensive now compared to some of the pastas out there that are $25 and $30 for a couple boxes. So Iโm going to order the elbows next and make some low-carb yummy mac & cheese. I canโt say enough good about this brand of pasta. Please do not stop making it. It is a godsend for us low carbers.

I must admit I was skeptical. We've been using a low-carb pasta called carb nada and I do love it, but it's not really as low in carbs as I wish it would be. So when I saw this new product, I thought well the reviews are good. I guess I'll give them a try so today I decided to use the elbows to make my shrimp and pasta salad a family favorite. I cooked the pasta elbows as directed 15 minutes. I took a few out to sample them to make sure they were done and they were done to perfection and delicious all by themselves , so I continued and made my shrimp and pasta salad and you cannot tell that this is low-carb pasta. The cooking instructions were perfect and when they were done, they had just the right texture and bite. They were not chalky and no grit no aftertaste just tasted like pasta. I definitely will be ordering these and hopefully they'll be available in supermarkets but until then they'll be on my subscribe and save with Amazon. I did try the sample pack so I have the spaghetti to try yet and I believe the penne pasta which I'm sure will be fine. The price for the three boxes was 14.99 and it's a little expensive but I'm sure as time goes on the cost will go down as it gains popularity, it's not something we eat every day but to be able to enjoy a pasta dish and not feel so guilty about it. Well that's a treat. NOTE UPDATE: Reminder, there is lots of fiber in this product.

I am currently being treated for Gestational Diabetics and was recommended these noodles by a friend for a delicious, carb friendly noodle. These do not disappoint! I find them to be delicious and are a fantastic option for me during my pregnancy. The texture is a little firmer than I'm used to, but I actually really like the consistency. Keep in mind that these noodles do take a little longer to cook than typical noodles, but that isn't a deal breaker for me. Overall, I'm super impressed with the quality of these noodles and will continue to purchase!

Many of the reviews complain that this isn't a low carb pasta. The pasta is marketed as "lower NET carbs" not low carb. The manufacturer isn't lying. Some consumers are just misunderstanding. NET carbs are calculated by deducting the stated amount of fiber from the stated amount of carbohydrates. This pasta is absolutely a lower NET carb pasta because there are 24 grams of fiber in every serving and after you subtract that from the 40 grams of carbohydrates you are left with 16 grams of NET carbs. That is a huge difference when comparing it to regular pasta. I have been buying Fiber Gourmet high fiber/lower net carb pasta for years and after a recent recipe change it's not to my liking anymore, so I decided to try the Carbe Diem penne and rotini. This is way less expensive and so much better. I cannot believe how good it is. The penne was cooked perfectly in 14 minutes and the rotini in 13. It wasn't broken in the package or hard and chewy after cooking. It tastes just like any regular dry pasta would taste. It is so delicious and I'm so glad I tried it. I am now a fan for life. Updated 6-10-24 - I just bought the elbows and they are also delicious. They cooked in 13 minutes. They are much bigger than standard Elbows. I attached a picture of before and after they were cooked for reference. I love the size. They are perfect in my garbanzo bean and lentil stew. They also have lines and they really hold onto the sauce. 8/9/24 - Updated to add an image of the spaghetti. It's great just like all the others, and it cooked perfectly in 16 minutes. This brand cannot be beat for low NET carb, high fiber pasta. It's the best! 8/25/25 - Updated to say I now use my Instant-pot pressure cooker to cook all these different pastas. As an example (you can find cooking instructions online for every type of pasta), for a full box of penne, I add 24 ounces (3 cups) of water with a splash of olive oil and a dash of salt. I cook on high pressure for four minutes, let it naturally release for two minutes then quick release. It's cooked perfectly without boiling a big pan of water. It's so much faster and a great option if you have a pressure cooker.

This is my favorite low-carb, lower-cal pasta, so far. I have tried everything - from shiritaki noodles, to spaghetti squash, to chickpea pasta and hearts of palm - you name it. I have been on and off of a low-carb diet since 2017 due to gestational diabetes and the risk for type 2 diabetes from having the gestational type four times. What causes me to go off my diet or have a "cheat day" is my craving for pasta. No kidding; I could live without all the other carb-rich foods, like bread and potatoes, but pasta is my weakness. This pasta keeps me on track. Plus, my husband has type 2, and it helps me keep his sugars down, as well. It is a little pricey, but I have it on subscribe and save to cut the cost a little. It is definitely worth it, though, because if I wrecked my diet with the regular pasta, I would regret it so much that I'd be willing to pay the money to take it back. lol It has a very similar texture and flavor to regular pasta. It's a little thicker than regular pasta, but it doesn't fall apart like some alternatives and fills your stomach like regular pasta with almost half the calories and way fewer carbs. There's also enough of it to feed my whole family because you get three packs of 12oz, so I can get my kids used to this so that they never miss regular pasta because this is what they know. It works in recipes that call for the regular stuff, and with a decent sauce, you probably won't miss carb-rich pasta. I won't even take a star off for the minor differences, because the health benefits outweigh the minute difference in texture. If you're doing keto or a diabetic diet, I highly recommend it to keep you on track.
