Label say "paella rice" but what kind of rice is it? is it bomba rice?

It is paella rice, but it is not bomba. This same brand does carry bomba. I think it's in a blue label, and it is clearly marked bomba.

I have a bag from matiz that says espana and one that says valenciano. are they the same?

Yes they are the same. Matiz is going through a rebranding strategy across their entire line. They are still the same products you've grown to love, it's just the regions will be eliminated from the packaging.

How much broth for 5 cups of paella rice?

I use an 8qt Dutch oven with 1 1/2 cups rice and around 3-4 cups of broth plus a can of diced tomatoes that is not drained. It’s a little on the wet side so it’s cook’s preference but around 1-2 cups of broth per cup of rice is traditional

Good rice - good results

Excellent paella rice

This rice retains structure while it absorbs flavor. I also use it for arroz con pollo. It is not creamy like arborio and should not be for these Spanish dishes.
