What are the dimensions of this roll? 30" by what?

According to the web page description, it has 100 SF. So if it is 30" in height (2.5') then the length would be 100/2.5 or 40'.

Adhesive sticks where, to next row or to concrete?

Ideally you should overlap sheets so I stuck the adhesive to the previous piece of plastic. I laid out the two rows stepped on the ends, and slowly pulled the backing of stepping the adhesive down as I went.

Does this help as a noise barrier for creaking/squeaking?

We used the underpayment film on a slab, so our experience might be different from a home with sub flooring. Also, it would depend on whether you’re laying laminate ( we do have some of that) which seems to be noisier when you walk on it, or vinyl plank (which we also have) which is much quieter.
