Cumpre o prometido

My go-to way for sharpening everyday-use knives
I don't mind sharpening knives, but I do enjoy having a sharp knife when and where I need one (in the kitchen for food prep, at the campsite or outdoors to cut ties and cords, at home to open an Amazon package). However, there is a balance between effort and reward as I have other things I'd rather spend my time on. Water whetstones are traditional, but they require lots and lots and lots of time to prep, use, dry/store, and maintain/flatten. My previously preferred tools to sharpen knives were a Lansky field sharpener (very convenient, consistent, and quick at putting an edge back on a dull knife, but the edge is only mediocre - low effort with usable results) and DMT diamond sharpener (much quicker and easier to use than a whetstone, but consistency is highly dependent on manual technique - moderate work with potentially excellent results). I decided to buy a Work Sharp Precision Adjust Knife Sharpener to see if I could put a nice edge on my knives with less work and greater consistency. Rather than moving a knife across fixed abrasive, this device moves the abrasive across a fixed knife guided by an angled guide rod. The benefits of this device/method are being able to sharpen my knives at any angle of my choosing CONSISTENTLY. If I use my Lansky, I have to settle for 23deg each side, or 45deg combined, which is not great for my food prep knives. If I use the DMT diamond sharpener, third-party clips give me the same angle but don't work well for long and/or curved knives. Each tool does give me an option to manually sharpen the blade at a more preferred angle, but this relies heavily on my dexterity and probably introduces +/- 10deg variability on each side. Overall, I feel Work Sharp Precision Adjust Knife Sharpener is easier/quicker to use than the DMT diamond sharpeners, produces a comparable edge, and this more consistently than any free-hand method. I also end up with a much sharper tip as I no longer "accidentally" tilt and drag that tip across the stone. Now this device isn't for everyone or for every knife. This sharpener doesn't (shouldn't) sharpen at less than 15deg; the abrasives will not pass cleanly over the knife clamp. The clamp also isn't designed to hold knives with a belly width of less than 0.5 inches; one can make it to hold onto narrow knives, but one must take caution to keep the abrasives from contacting and taking material off the clamp. The clamp is also limited with respect to spine thickness; I have a knife with a spine thickness of 0.18in that almost didn't (barely) fit. (The spine needs to thin enough to sit within a triangular cutout in the holder that helps center/level the knife; the thicker the spine the shallower the knife will sit in this triangular cutout and the less surface area the clamp will have to hold onto the knife surface.) Also, be sure to set a less shallow angle for knives with surface finishes or coatings. The clamp has a rubbery pad that will not scratch surfaces, but setting too shallow of an angle will have you slide the abrasive surface right across that prized surface finish. One other thing to note is that the diamond grit sizes are 320 and 600. The ceramic surface feels as smooth or smoother than 1200 grit, so there are reviewers who wish there was another grit ~900-1000. I do finish off using my fine grit DMT diamond sharpener for times I want a more polished edge. This is something to keep in mind. Also, since the sides are sharpened one at a time (i.e. less alternations from one side to the other), burnishing happens. I'd recommend a good stropping after using this device to remove that burr and refine the edge. Overall, I'm pleased with my purchase. For the right knife/situation, I can sharpen with little effort and get a consistently nice edge.

The best but not perfect.
By far the best sharpener ever, it's genius... Unlike Lansky, this can adjust angle at precise setting also while hitting the curves. What could've been perfect, an option to get different grids/spare "Tri-brasive" rods and bigger clamps. I find inconvenient sharpening one of my hunting knife (thick and chunky spine) I will definitely buy another regardless Work Sharp wants to update their product or not.
