will 1/4" OD copper tube fit as well?

1/4” OD pipe has a thinner wall and may not work. Plus it’s ridged on the cut ends and may not seal properly.

Would these work with hydration bladder tubing?

If you bladder tubing is soft silicon rubber type it is too flexible to work. You will need a ferruled nipple type connector.
