How to read the experation date?

This is trickier than it sounds. It's on the side of the lid in 2 lines. Mine reads: top 20 020 bottom 11:25. This looks like November 2020 if you assume the year is printed as three digits (020 not 20). This seems absurdly soon. Note that it is a "Best By" date. Mustard basically does not spoil. Vinegar is a preservative and mustard seed is anti-microbial so there's little chance of spoilage. Eventually mustard will lose its taste and the vinegar will separate from the mustard seed powder. As I tend to have 3 or 4 varieties on hand, they sit around a while and I've never had a problem. "Best By" is a taste indicator. The company thinks the taste will be best by that date. Lowensenf tends to get a bit hotter over time and many people like this. But you don't worry about spoilage.

is the jar supposed to pop when opening?

Yes. It means the vacuum seal, which protects the freshness and wholeness of the product, was intact. When you opened the jar and it popped, that sound was the seal popping, so you know it’s as it should be.
