Will this work with 110v wall socket power supply?

Yes, it can work with 110V power supply. But the current should be below 3 A.

I can't get mine to stay on. What's the trick?

These are momentary contact switches. They would need to wired to a latching relay or automation controller if you need a stay on function.

Will this work as a starter button for a motorcycle?

As long as it was wired in place of the original button or at least connect to the solenoid then i would say yes. But not directly to the starter motor itself. While it may work momentarily, arcing inside the button would quickly ruin it if it was connected directly. Too much current draw.
